De Bewaarschool
This year, De Vuurplaats welcomes the collective De Bewaarschool, which is all about future-proof food. Here, you can taste the brand-new Kokumi snack by the (rightfully) self-proclaimed fermentation queen Ivana Mik. NEAP Seaweed features hand-folded dumplings with seaweed, as well as miso and garums. Saskia Boer from Outsiders Foraging gathers to her heart's content, serving up the most extraordinary flavours from the wild. In addition, these three tastemakers are joining forces with Max Pesch (Flores) and Kuba (Vin Natuur, Groningen) for a special collaborative menu. This is a collab you won't want to miss.
De Bewaarschool Foraging Pairing
Every dinner can be paired with the Foraging Pairing by Saskia Boer (Outsiders Foraging). She forages invasive exotic species and plants that grow in abundance. Drink a soda made of the dreaded Japanese knotweed, which is secretly mostly terrifyingly delicious. Shrubs of roasted fig leaf, fresh cucumber juice, and horseweed: a delicious 'weed'. Glass empty? Ask Saskia about the workshop, so you can behave a bit wilder at home too.
